I always thought sprouts were a tasteless afterthought, not really a food but a health kick gesture, something you find in a co-op that smelled like patchouli.
I was wrong.
What changed my mind was one afternoon nothing else was around and I ate a small bag of sprouts while working on my computer and then put some in a simple salad for lunch. I felt really good all day. I was satisfied but not full, that perfect balance had been reached between the two states and I was energized. There was no slump in my energy that afternoon. This feeling only happened when I ate a salad of sprouts, and when I ate something else for lunch that wasn’t the case. So I made different salads each day with different sprouts and the same fantastic result, energy and sense of balance ensued. Also, my digestion felt like it had gotten a tune-up.
I went online to do some research and understood why I felt so good when I ate sprouts. Because these are germinated seeds of a vegetable or plant and they are literally juggernauts packed with vitamins, essential minerals, and fiber, but very much lacking in fat, salt, and calories. One seed can grow several pounds of food, so it makes sense that they’re a powerhouse source of all the things your body needs.
